SUNDAY POTTERING


We woke up this morning to a lttle more of this.


Lovely puddles on the front path. The brown stuff at the top of the picture is our front lawn. Let's hope it turns green soon from the rain.

We started the day with a breakfast of tropical fruit.


Yum !

Then I decided to try out a new recipe for our Christmas buffet.

Because of the heat we always have cold Christmas dinner - ham on the bone, chicken and turkey, all sorts of lovely salads.
All the women help, bringing along their specialties - potato salads, wild rice salads, crunchy noodle salads, cottage cheese and cucumber salads.......
I thought I'd like to try something new..

... so I assembled ingredients for a Kumera and Fried Noodle Salad.


First I peeled the Kumera ( you may know it as orange sweet potato or perhaps yams ) and chopped it into cubes.



Then popped it into the oven to roast for 25 minutes. Then  allowed it to cool.

Then you combine these in a jug:
* a third of a cup of coconut milk
*   2tabsp lime juice
*1 and a half tabsp brown sugar
*1 teasp red curry paste

Next you fry 3 cloves of garlic finely chopped ( I used an onion instead ) and 1 tabsp of grated fresh ginger to lightly brown them .


 
Cool then add to the dressing.

Then all you have to do is toss together :-
kumera
half a cup of cashews
1 cup chopped coriander leaves
1 pkt of fried noodles

Pour over the dressing and toss it around.
Put it into a bowl and sprinkle over a few cashews and some coriander leaves and there you have it!



Looks just like the photo in the magazine!



It tastes great! - very Thai with lovely fresh gingery, limey flavours.
I think I'll add it to my contributions for Christmas day.

    This looks yummy! We're having trouble with planes in the UK, the channel tunnel, snow, so cold otherwise I'd be popping over to tuck into some of that! Looks lovely.
    Seriously, I've never ever flown, don't want to either, so it's okay you can have it all!! ha.ha.

    Garden Bell got me started on this. She did hers first. She tried to get me started and I said, 'Whatever have I got to talk about?'. But you know we ramble as though we have a friend sitting drinking tea with us in the Kitchen! It has brought so much fun to me, I would be absolutely lost now without it.

    I'm really so....pleased you are enjoying yourself with your new friends! Yes, I pen palled years ago 2000 in fact. This is so....much better.

    We're picking up new words from different countries, meeting new people all the time, checking out the 'weather' all across the world. It's just fantastic!

  3. I know Scott will love this one. Sweet Potatoes are one of his favorites. I'm going to have to give this a try real soon. Thanks for stopping by my garden. Isn't this blogging thing so much fun. I am so glad Sue started to. It's such a special pleasure to have all these new friends, especially when pretty much snowed in with the sniffles.
